Luscious Lavender Brownies
|
1 1/4 cups cake
flour
1/2 teaspoon salt
3/4 teaspoon baking powder
6 ounces
unsweetened chocolate,
chopped
1 cup chopped pecans
or walnuts
(optional) |
12 tablespoons (1½
sticks)
unsalted
butter, cut into
one
inch squares
2 1/4 cups

4 large eggs
1 teaspoon vanilla extract

Either oil, spray with non-stick cooking spray, or line with parchment paper
or foil,
a 12x9 inch
baking pan. Pre-heat oven to 325° F.
Combine flour, salt and baking powder in a medium bowl and set aside.
Melt butter and chocolate in a large heat-proof bowl set over a saucepan
of almost simmering water, stirring occasionally, until smooth. When
chocolate mixture is smooth, remove bowl from saucepan and gradually
whisk in lavender sugar.
Add eggs, one at a time, whisking after each addition until thoroughly
combined. Whisk in vanilla. Add flour mixture in three additions,
folding with rubber spatula until batter is completely blended and
smooth.
Transfer batter to prepared pan; using spatula, spread batter into
corners of pan and smooth the surface.
Sprinkle nuts (if using) over batter evenly. Bake until toothpick
inserted into the center of the brownies comes out with a few moist
crumbs attached, 30-35 minutes. Cool. Cut into 2 inch squares and serve.
These brownies freeze really well!
We wrap them
with plastic wrap, next with freezer paper,
and then in a freezer-safe plastic baggie, just to be thorough.
And... you can even eat them right out of the freezer. Or take them out
of the freezer, defrost, and heat them for 10-15
seconds in the microwave for that out-of-the-oven baked yummy.
